Chef’s secrets: How to cut a mango

Mango on the Go Go-Margaux Drake

Mango’s are so delicious and they’re quick and easy to prepare.  Many people struggle with cutting this tropical fruit and it’s actually a lot easier than you think.  Follow these simple steps for a perfect mango every time.

TIPS TO CUT A MANGO
Place the mango on its side.  Using a serrated knife, slice the mango on either side of the large seed.  Using a paring knife, place one of the halved mango pieces in the palm of your hand with the fleshy side facing you and cut it horizontally and vertically being careful not to pierce the peel or your hand.  Next, push the skin up from the center on the peel side to expose the bite-sized pieces and slice them off or take a bite.

That’s mango on the go-go!

ZERO WASTE
Don’t toss the seed!  Remove the peel from the seed portion and nibble around it (a great ‘job’ for kids) or carefully trim the flesh from the seed.

Serve fresh mango cubes with a squeeze of lime juice, a pinch of sea salt and some grated fresh ginger root.  Or, try my recipe for
