Cranberry ginger sauce: show-stealing holiday side dish

Cranberry Ginger Sauce-Margaux Drake

The produce department at D&W Fresh Market is fully stocked with fresh cranberries for the holiday season.  This superfood is also found in the freezer isle all year-round.  Fresh or frozen, this cranberry ginger sauce recipe is sure to add a little zest to your next holiday gathering.

Cranberry Ginger Sauce
Makes one quart

Ingredients:
2 12 oz. bags of cranberries
1 1/4 c sugar
2 Granny Smith apples, medium sized and diced
2 T ginger root, grated
1 c red wine
1/2 c orange juice, freshly squeezed
3 T apple cider vinegar
1 T orange zest, plus extra for garnish
1 T walnuts, chopped and toasted

In a medium sauce pan, bring the cranberries, apples, ginger root, red wine, orange juice, apple cider vinegar and sugar to a boil.  Stir until the sugar dissolves.  Simmer the sauce over medium heat for 10 minutes or until it thickens.  Serve the cranberry sauce warm or chilled.  Garnish with toasted chopped walnuts and a sprinkle of orange zest for a little crunch and color.

Notes:
Cranberry ginger sauce is easy to make and can be made in advance to help you save time this holiday season.  This recipe can be kept fresh in the refrigerator for one to three days or be frozen for later use.
