Winter Brain Boost: Fudge

Fudge to the rescue! Naturally our mood takes a dip in winter due to lack of sunlight, but you can improve your mood with chocolate, used in moderation of course. Six basic ingredients, one bowl, hand mix, spread into a pan or form and (try to) wait for it to freeze. A great recipe to do with kids. No complicated equipment, nothing sharp, nothing hot. Just mix and freeze but not before a little taste testing:) Pop one in your mouth for a little sunshine and happiness in your day.

Fudge
vegan+gluten-free+raw
makes one 8”X8” baking dish

Ingredients:
1 cup almond butter, raw is best
1/2 cup cacao powder, raw is best but can substitute chocolate baking powder
1 teaspoon vanilla
2 tablespoon coconut oil
1/4 cup agave nectar or honey, raw is best
1/4 teaspoon sea salt

Optional:
1/4 cup walnuts, chopped
1/4 cup raisins

Preparation:
-Place almond butter, cacao powder, vanilla, coconut oil, agave nectar/honey and sea salt in a medium sized mixing bowl and hand mix with a wooden spoon.
-Once the mixture is smooth, add in the optional chopped walnuts and raisins.
-Spread the mixture into an 8″X8″ square baking dish or individual forms or cups.
-Freeze until firm, then cut into pieces with a warm knife and serve.
