Cilantro Lime Rice
for WOTV 4 Women
Peas and carrots, Popeye and Olive Oyl, chili and rice, some things are just made for each other! This recipe paired with my mexicali chili is no exception. It’s a great way to get more leafy greens into your diet and add more punch to your side dish of plain rice. Herbs are not just for flavor, they are packed with vitamins too! Cilantro’s main health benefit is that it’s high in vitamin K which helps your blood clot and supports growth of strong bones.
Cilantro lime rice, can be whipped up so quickly in your blender or food processor. Or, maybe you want to chop by hand? Even better. Slicing and dicing, in a calm kitchen, is very cathartic. Any which way you decide to make this recipe, it can be enjoyed alone or it can be the perfect compliment to your next pot of chili.

Cilantro-Lime Rice
(v/gf)
makes 4 cups

2 C Jasmine Rice
Water
Sea salt
1 C Cilantro
1-2 Garlic cloves
2 T Lime juice
1 T EVOO

Directions:
Rice:
Rinse rice and add it to a rice-cooker.  Fill to the appropriate line with filtered water.  Or, make rice on the stove top using the directions on the package.  Add a pinch of sea salt.  Follow the manufacturers directions for your specific rice cooker.

Cilantro-Lime Dressing:
While rice is cooking, add cilantro, garlic and lime juice to a food processor fitted with the s-blade and pulse.  Slowly pour in EVOO to the blade.

Serving:
When rice is done cooking, fold dressing into rice, fluff with a fork and serve.
