A holiday party favorite: Spinach artichoke dip

Spinach Artichoke Dip

Makes one quart

Ingredients:
2 cups veggie monterey jack shredded cheese
1 cup nutritional yeast
1 cup Veganaise
1 cup vegan sour cream
1 10 oz box of chopped frozen spinach
1 6 oz jar of artichoke hearts, drained and quartered
1/2 cup water chestnuts, chopped
4 garlic cloves, chopped
1/2 t black pepper, ground

Preheat oven to 400 degrees. In a large mixing bowl cream together veggie monterey jack shredded cheese, nutritional yeast, Veganaise and vegan sour cream. Thaw and squeeze the chopped frozen spinach, draining off any excess water. Then, add it and the rest of the ingredients to the mixture and stir to incorporate. Place the mixture into a baking dish and bake uncovered for 20-25 minutes at 400 degrees. Serve with tortilla chips, crackers or toast points.

Notes:
Spinach artichoke dip can be made one to two days in advance, covered and refrigerated. Allow the dip to warm to room temperature before baking.
