An eggs and oats omelette is a perfect high protein breakfast or snack. I eat one daily. It’s healthy and easy to make. I like to buy organic, pasture raised eggs and just use the whites. Five egg whites pack 18 grams of protein and the fiber in the oats make it fluffy and filling. Make a few ahead of time, and warm them in a toaster oven throughout the week. Top with salsa or hot sauce. This not only will help with curbing your appetite but studies have shown that oats can reduce cholesterol levels. Plus, It’s a delicious way to start your day.
Eggs & Oats Omelette
vegetarian + gluten-free
makes 1 omelette
Ingredients:
1 teaspoon coconut oil
5 egg whites
1/4 cup of quick oats
1 tablespoon of salsa or hot sauce
Preparation:
Heat oil in a small nonstick frypan, over medium heat.
Whisk egg whites with the quick oats.
Pour mixture into the frypan, add a lid on top so the eggs cook on both sides.
When firm, flip it over and continue cooking until the omelette is cooked through.
Top with fresh salsa or hot sauce
Notes:
Sauté fresh herbs like 1/2 teaspoon of rosemary or basil for 30 seconds in the coconut oil before pouring in the egg white mixture to add a twist to the flavor.
