Quick Back To School Meal: Nacho Mama’s Pizza on WOTV 4 Women |
Are hectic back-to-school schedules leaving you in need of quick, healthy, at-home meals? One of our family’s favorites is Nacho Mama’s Pizza. This Mexican pizza can be whipped together in minutes and everyone will devour it.
Also, remember as the weather gets cooler cilantro and greens will thrive in the garden. Hopefully you can harvest some of your own produce for this recipe.

Nacho Mama’s Pizza

Makes 1 pizza
Makes 1 pizza
1 Pizza crust, gluten free or traditional flour crust (I use Sami’s Bakery Millet and Flax Pizza Crust)
1 Can (12 oz) vegetarian refried black beans
1 T Vegetable oil
½ C White onion, finely chopped
3 Garlic cloves, minced
2 T Cumin, ground
1 T Chili powder
1 t Cayenne pepper
1 Package Daiya cheddar cheese
½ C Jalapeno slices, pickled
1 C Romaine lettuce, chopped
½ C Roma tomatoes, chopped
¼ C Green onion, chopped
¼ C Cilantro, fresh and finely chopped
½ Avocado, sliced
1/8 C Cashew Ranch Dressing
1 Can (12 oz) vegetarian refried black beans
1 T Vegetable oil
½ C White onion, finely chopped

2 T Cumin, ground
1 T Chili powder
1 t Cayenne pepper
1 Package Daiya cheddar cheese
½ C Jalapeno slices, pickled
1 C Romaine lettuce, chopped
½ C Roma tomatoes, chopped
¼ C Green onion, chopped
¼ C Cilantro, fresh and finely chopped
½ Avocado, sliced
1/8 C Cashew Ranch Dressing
Preparation:
Preheat oven to 450 degrees. Prepare crust per manufacturers instructions (2T of ground flax seed mixed with 6 T warm water replaces 2 eggs). In a sauté pan, heat vegetable oil and sauté onions and garlic until translucent. Add spices and cook for 1-2 minutes. Add refried black beans and cook until fully heated. Spread black beans evenly over the pizza crust, cover generously with Daiya cheese, sprinkle with pickled jalapeno slices and place in oven for 10 minutes or until cheese melts. While pizza is baking, prepare vegetables. Remove pizza from oven, cut slices PRIOR to adding fresh toppings but leave pizza in tact, sprinkle top of pizza with lettuce, tomato, onion, cilantro and add one avocado slice per piece of pizza. Drizzle with cashew ranch dressing and serve.
