Peanut Butter Oatmeal Protein Bars

Make back to school a breeze by having quick peanut butter oatmeal protein bars on hand.  Kids will love them and you don’t even need to mention how healthy they are!  Mix by hand, oats, almonds and protein powder with peanut butter, honey and vanilla .  Then, press into a baking dish and refrigerate until firm.

makes 1 8”X8” baking dish
dairy-free + gluten-free

Ingredients:
1 teaspoon coconut oil, melted
3/4 cup honey
1/2 cup peanut butter
1/2 teaspoon vanilla extract
1 cup quick oats
1/2 cup protein powder
1/2 cup almonds, slivered

Preparation:
Prepare an 8”X8” glass baking dish by brushing the sides and bottom with coconut oil and it set aside. In a medium sauce pan, combine honey and peanut butter over low heat until the mixture becomes smooth and warm. Then add the vanilla extract, oats, protein powder and almonds into the pan and stir with a wooden spoon to incorporate all of the ingredients. Pour the mixture into the baking dish, then use your hands to smooth it out covering the bottom of the dish. Refrigerate until firm. Cut into 9 or 12 bars, and wrap them in cellophane individually. A perfect on-the-go snack!

Tips:
Don’t have almonds? Try sunflower or pumpkin seeds.  Experiment by adding coconut flakes or raisons. Ask your kids for what whole food flavors they would like to try. Have fun playing with the ingredients in this recipe to suit your family’s tastes.
