Tarragon Lime Margaritas

Try my recipe for tarragon lime margaritas or “Margaux”-ritas as you celebrate these last days of summer. It’s a PERFECT cheat meal cocktail, because fitness is about BALANCE. If you are growing herbs in your garden by this point in the season you have a lot of them. Now is the time to not only use them in your food but in your summer drinks and absolutely in your cocktails too. Use them up before the first frost. I know that’s hard to think about when it’s 90 degrees out, but it’s just 6-8 weeks away, believe it or not. Enjoy those herbs while you can. Cheers to summer!

Tarragon Lime Margaritas-Margaux Drake

Tarragon Lime Margaritas
Makes 4 8oz drinks
dairy-free + gluten-free

Ingredients:
1/2 cup agave nectar
1/2 cup tequila, optional
4 limes, peeled
6” tarragon sprig, fresh
3 cups ice

Preparation:
Place all ingredients into a high-speed blender and blend until a slushy consistency is achieved. Play with the amount of ice so that the consistency is right for you. Less ice will make your drink thinner and more ice will make it thicker. Enjoy with or without tequila. Enjoy responsibly.

Tips:
If your blender has clearly marked measurements on the side, add your liquids in first and use the markings to save yourself the step of measuring them in a measuring cup first. Also, make sure to remove all of the peel from the limes as it is very bitter and will not emulsify into the ice.
