Kids are headed back to school and they’re hungry at the end of the day. Try edamame for a quick after school snack! It’s just a fancy way to say “soybeans in the pod”. They are also sold shelled. Wash fresh or frozen edamame, then lightly steam or blanch them until they’re bright green. Drain them, sprinkle with sea salt and serve! So easy. This low fat, high fiber, high protein snack is a perfect solution for your ravenous crew.
STEAMING
Place one package of fresh edamame into a steamer and let steam for 3-5 minutes. Watch them carefully as to not overcook.
BLANCHING
Bring 4 cups of water to a boil in a large saucepan. Add 1Lb. of fresh edamame and 1/2 t of sea salt. Return to a boil. Cook for about 3-5 minutes. Drain before serving.
HOW TO EAT
Gently squeeze by biting down on the pod and pop the beans into your mouth. Discard the pod as it is not edible.
TIPS & FACTS
Serve hot or cold and use as and appetizer, snack or ingredient by adding the beans to a pasta or tossed green salad.
Fresh edamame is found in the produce cooler at D&W Fresh Market. It’s the only vegetable equal in protein content to meat or eggs. According to the FDA, 25 grams of soy protein may reduce the risk of heart disease. High in protein, vegan, non-GMO and heart healthy, it’s fun to eat. Kids love it and so will you!
