Guacamole is a hit at any summertime party! Seriously, have you been to a party where there was any guac leftover, ever? Do you find yourself scraping the sides of the serving bowl with a chip to get every last little bit? No worries, click on the video player below and I’ll show you how to make BOTH salsa fresca AND guacamole….RAPIDO!

In a perfect world, I would hand chop all of the ingredients for a much better presentation. However, in reality it always seems that I’m left with only five minutes to make BOTH of these recipes, so the food processor it is!
Now is the time you can pull most of these ingredients from your kitchen garden. If you didn’t plant a salsa/guacomole garden this year, head out the farmer’s market to buy your produce for these recipes, and consider it a fun project for the future! Next year the only things you will have to buy are the avocados.

Salsa Fresca
(v/gf/r)
Makes 2 cups

6 Roma tomatoes
¼-1/2 Red onion
4 Green onions
½ Cilantro bunch
1 Jalapeno (always taste to determine heat)
2-4 Garlic cloves
Lime juice to taste
Salt to taste

Directions:
Place each ingredient in a food processor and PULSE until minced. Do not over-process. Transfer to a mixing bowl and gently mix to incorporate ingredients. Add lime and salt to taste. Reserve ¾ C of the salsa for guacamole.

Guacamole
(v/gf/r)
Makes 2 cups

4 Avocados, ripe
¾ C Salsa fresca
Lime juice to taste
Salt to taste

Directions:
Mash avocados, add reserved salsa and adjust lime and salt to taste.

*Leaving a pit or two in the guacamole will slow down the oxidation, or darkening of the avocados. But, does guac ever really last that long?
