According to the Old Farmer’s Almanac, the Spring Equinox occurs at 1:14 A.M. EDT tonight, May 20, 2012. However, I don’t need a book to tell me that spring is here. There are signs of life and new growth all around; from my white geranium budding to the willow trees bursting with a yellow glow as they do right before leafing out, from all of the green leaves unfurling in my greenhouse to my herb seedlings on the desk by the window arching toward the sun, from the birds that sing me their happy morning wake-up tune to the bulbs that all exploded into bloom this past weekend…
Indeed, spring is here!
I’m hearing all kinds of “new growth” comments from my detox friends as well. One completed her first 5K running race over this weekend and was very proud that this St. Patrick’s Day was more about health and less about green beer (Go Girl!)! Others have already seen a transformation of their skin, and noticed slimmer faces.
My class asked me to share some of our meals for inspiration. Here are a few from the weekend…
My Lunch: Chipotle Salad(V/GF/R) Lettuce, pico de gallo, fresh corn salsa and guacamole I smuggled in Flax Crax. Not my FAVE but good in a bind. |
My Dinner: Zucchini Pasta Alfredo garnished with Crushed Black Pepper and Fresh Herbs (V/GF/R) From Matt Amsden’s Cookbook, Rawvolution Served with a side salad with Annie’s Naturals Goddess Dressing, Flax Crax, and a few plant enzymes. |

yes, spring is definitely here! 🙂 I’m loving it and how renewed I’ve been feeling! thanks for mentioning me in this post – I’ve been so excited about this detox I’ve been telling everyone. Got my mom to make vegan cupcakes and try some sprouts after talking about our meetings and all the knowledge I’ve learned. so awesome!
