Thursday night eighty seven people packed into Harvest Health Foods in Hudsonville for my “Raw Foods Simplified” class. It was very exciting to see how many people from West Michigan are interested in raw, plant-based cuisine. Boys and girls, men and women, age seven to seventy five were there ready to absorb all they could about a raw food diet.
One common question is where to start? The answer is simple: Dessert, of course!
If you can leave refined sugar behind and get your hands on some raw cacao that is full of antioxidants which lowers the cell damaging free radicals in your body and it’s POW in your mouth, why would you want to eat anything else when you need a sweet treat?
They LOVED it and you will too!

Raw Cacao Raisin Walnut Fudge
(v/gf/r)
Makes one 8”X8” baking dish
1 C Almond butter, raw
1/2 C Cacao powder
1 t Vanilla
2 T Coconut oil
1/4 C Agave nectar
1/4 t Sea salt
1/8 C Sprouts (if using food processor)
1/4 C Walnuts, chopped
1/4 C Raisins

Makes one 8”X8” baking dish
1 C Almond butter, raw
1/2 C Cacao powder
1 t Vanilla
2 T Coconut oil
1/4 C Agave nectar
1/4 t Sea salt
1/8 C Sprouts (if using food processor)
1/4 C Walnuts, chopped
1/4 C Raisins
Preparation:
Place almond butter, cacao powder, vanilla, coconut oil, agave nectar, sea salt and sprouts in a food processor and process until smooth or hand mix in a medium sized mixing bowl. Hand mix in the chopped walnuts and raisins. Spread out in an 8″X8″ square baking dish. Freeze until firm, then cut into pieces and serve.
