Raw Strawberry Cheesecake on WOOD TV8

Want to eat dessert without feeling guilty? Raw food is great for your body and tastes amazing. No need for guilt; your body will get all the fuel and your taste buds will get all the flavor!


My daughter, Ellie, and I are certified RAW food chefs and we were guests yesterday on eightWest (Wood TV-8) where we introduced RAW foods to the eightWest viewers and demonstrated how to make RAW Strawberry Cheesecake. Raw Strawberry Cheesecake


Crust:

1 t Coconut oil, organic & raw
1 C Almonds, organic & raw
1 C Walnuts, organic & raw
1 t Vanilla, organic
1/2 C Agave, organic & raw

*Using a pastry brush, coat bottom and sides of glass pie dish with coconut oil and set aside.
*Place remaining ingredients in food processor fitted with the chopping blade.
*Pulse until the mixture resembles small crumbles, do not let mixture form into a ball.
*Press firmly into bottom and sides of glass pie dish.

Vanilla Filling:

2 C Cashews, organic & sprouted

3/4 C Almond milk, organic & raw

1/2 C Agave, organic & raw

2 t Vanilla, organic

1/4 t Salt (Celtic Sea Salt is preferred)

3 T Lecithin

1/2 C Coconut oil, organic & raw

1 C Coconut meat (from a young coconut), organic

*Place cashews in a bowl, cover with filtered water and let soak for 4-6 hrs.
*Drain and discard water. Do not use soaking water from nuts!
*Place all ingredients, starting with liquids, into a high powered blender.
*Blend until smooth and creamy.
*Pour 2 cups of vanilla filling into into the pie crust.
*Tap pie dish gently on counter to level the filling.

Strawberry Filling:

2 C Strawberries, organic

*Clean and remove stems.
*Add to reserved vanilla filling in blender.
*Throughly blend until smooth and creamy.
*Pour strawberry filling on top of vanilla filling in pie crust.
*Swirl together with a knife.
*Cover and chill in refrigerator for 4-6 hours or place in freezer for no more than two hours.

Note: Add fresh strawberries on top of pie crust then add fillings. And, have fun and create your own designs with the fillings!
