Healthy smoothies make an excellent breakfast or afternoon snack but sometimes we get stuck in a bit of a smoothie-rut making the same ones day after day. I needed a change of pace and thought you would too.
Strawberries are at their peak right now and goji berry season is coming up next so I thought, heck why not whip them up together into something fabulous in the blender? We have dried gojis here at D&W Fresh Market-Knapp’s Crossing at the moment, but that may or may not change in the near future (hint hint).
Gojis are considered a superfood (thus the smoothie name) and they are high in micro and macro nutrients. Strawberries are low in fat and calories, and high in antioxidents. Both types of berries are high in fiber which keeps your digestive system moving smoothly. So let’s get blending!
One more tid-bit before the recipe: I had a little friend over in the last week and he kept calling strawberries, “strawbellies”. So the unofficial name for this smoothie and the one that I intend to use on a regular basis is “Strawbelly Goji Super Smoothie”. Whichever name you choose to use, I know you’re going to LOVE it!
Strawberry Goji Super Smoothie
(v/gf/r)
Makes 3 Cups
1 C Plant-based milk *raw if you make your own
1 C Strawberries *tops are edible and provide vitamins and minerals like any other leafy green
5 Dates, pitted
2 T Goji berries, dried
1/8 C Sprouts, alfalfa
10 Ice cubes
Preparation:
Place all of the above in a blender and blend until smooth.
*Dried goji berries are only available in the produce department at D&W Fresh Market-Knapp’s Crossing
