Due to the lingering cold, wet weather here in West Michigan I asked my family for their favorite plant-based comfort food recipe, so I could share it with y’all. Without question or hesitation the vote was unanimous: Thai noodles with spicy peanut sauce, comfort food to warm your soul.
We have decided that this spicy peanut sauce on anything is fabulous! Use the sauce as a dip for vegetables or a spread for crackers. Thin it down and you’ll have a great salad dressing. Most of the ingredients store well, so once these items are on hand, this dish can be made at a moment’s notice. Very versatile and simple to whip up, it can be served as a warm main dish or chilled over a bed of greens. The possibilities are endless.
Vegans and non-vegans can unite with this recipe (which is another reason why my family LOVES this one), as different protein options can be added to the individual portions.
Thai Noodles with Spicy Peanut Sauce
(v/gf)
makes 5 servings
Noodles:
16 oz. Pasta/GF Pasta/Rice Noodles
2 T Sesame Oil
Spicy Peanut Sauce:
1/3 C Peanut butter, creamy
1/8 C Soy sauce
3 T Rice vinegar
2 T Sesame oil
1T Chili garlic sauce
1 T Ginger root, fresh and grated
3 Garlic cloves
2 C Broccoli florets
Garnish:
3 Green onions, chopped
1/3 C Cashews, chopped
Dash of Crushed red pepper
Preparation:
Noodles
Cook pasta in a large pot of salted water, according to the package directions. Drain noodles, retaining water to steam broccoli florets. In medium bowl, add noodles and 2T of sesame oil. Toss to coat and set aside.
Spicy Peanut Sauce:
In a food processor add peanut butter, soy sauce, rice vinegar, sesame oil, chili garlic sauce, ginger and garlic. Process until smooth and set aside. Steam broccoli florets over the pasta water until bright green and tender. Add sauce and broccoli to noodles, toss to coat and place in a serving dish.
Garnish:
While broccoli is steaming, chop the green onions and cashews. Finish the dish by garnishing with green onions, cashews and crushed red pepper, then serve.
*If desired, add tofu, tempeh, pork tenderloin, or shrimp.
